Garlic Chicken and Sauteed Vegetables

On those tough and trying days when time is precious and resources are scarce, I look to recipes that are simple and malleable. I like to have just a general outline. I like the freedom to substitute at will in order to use up pesky, random ingredients lying around. Below is a quick and easy way to make dinner without having to actually go grocery shopping.

This simple summer recipe transitions well into the fall when we all start craving heartier food. Substituting any of the vegetables is easy: try asparagus or potatoes for a richer texture and taste. And of course, the meat (or lack thereof) you choose is entirely up to you.

Cooking time: 40-45 minutes

Ingredients

4 chicken drumsticks

2-4 tbsp. olive oil

Salt and pepper

2 tbsp. chopped garlic (or more, if you prefer)

Pinch dried oregano

4 yellow peppers

4 tomatoes

1 yellow onion

Fresh herbs (optional)

Directions for the meat:

Preheat the oven to 350 F.

Rub olive oil, salt, pepper, and some pieces of garlic on each of the drumsticks. Then, wrap the drumsticks in individual sheets of aluminum foil, making little pouches where the foil meets at the top so you can open them easily. Bake for 35 minutes (more or less depending on size). Open the pouches and sprinkle a pinch of oregano on each drumstick. Return to the oven and allow them to crisp until the skin becomes a light golden brown, approximately 5-10 minutes.

Directions for the vegetables:

Chop the peppers and tomatoes into square-inch pieces; chop the onion into smaller pieces.

Heat a saute pan with olive oil over medium heat. Add the onion and saute until slightly tender. Add the peppers, stir, and cover with a lid. Cook for 5-10 minutes. Finally, add the tomatoes and replace the cover. Stirring occasionally, cook one final time: just a few minutes for al dente, or 15-25 minutes for softer vegetables. This is also an opportune time to season the vegetables with salt, pepper, and fresh herbs like basil, dill, or thyme.

Serve the chicken and vegetables with a glass of red wine or a dark beer. Bon appetit!
